Rosti with Smoked Salmon Fillet


Salmon is one of the richest sources of Omega-3 and accompanied by a crispy rosti, this dish is not only delicious but healthy too.

Ingredients (Serves 4):
• 500g potatoes
• 1 small onion
• 1 egg
• Salt
• Pepper
• 4-5 tablespoons vegetable oil
• 150g quark
• 100g sour cream
• 1 teaspoon grated lemon zest
• ½ pot of fresh parsley and chive
• 250g smoked salmon fillet

Method
Peel the potatoes and coarsely grate them. Peel and finely chop the onion. Beat the egg in a medium sized bowl. Add the onions and grated potatoes, then season with salt and pepper and mix thoroughly.

Heat the oil in a pan. Form small patties out of the potato and egg mix and fry 8-12 little rostis on each side.

Meanwhile mix quark, sour cream, lemon zest, salt and pepper together. Finely chop the herbs and add them to the quark mix.

If preferred, heat the salmon in the oven until warmed through, then serve it with the rosti, herb dip and a simple side salad.
