Pan-Fried Salmon Fillet in Wasabi Sauce


As Salmon is one of the richest sources of Omega-3 this dish is not only delicious, but healthy too. It has a bit of a kick and is ideally served with rice.

Ingredients (Serves 4):
• 4 spring onions
• 2 garlic cloves
• 1 bunch of fresh coriander
• 500g skinned salmon fillet
• 3 tablespoons vegetable oil
• 4 tablespoons Crème fraîche
• 6 tablespoons orange juice
• 2 tablespoons Lime juice
• 1 tablespoon Wasabi (Japanese horseradish)
• 2 Lime or orange wedges
• Salt
• Ground pepper

Method
Peel and finely chop the garlic. Wash the coriander and separate the leaves from the stems. Put the leaves aside (they will serve as decoration later) and chop the stems. Wash the spring onions and slice into fine rings. Cut the salmon into large pieces. Heat oil in a non-stick pan and fry the salmon at a medium heat on each side for approximately 5 minutes. Do not forget to season the fish with salt and pepper. Mix the Crème fraîche with a third of the orange juice until smooth and season. Add garlic and spring onions to the salmon and sauté for about 1 minute. Add a splash of lime and orange juice, then stir in the Crème fraîche and finally the remaining juice. Add the Wasabi and let it dissolve in the sauce. Add the chopped coriander and season to taste. Serve the salmon in Wasabi sauce and decorate with lime or orange wedges and coriander leaves.
